When life gives you lemons, make Limoncello 🍋
Makes 1 litre.
10 lemons (organic lemons work best!)
1litre of good quality vodka
1 cup sugar
1 cup water
Zest the skin of the lemons with a potato peeler. Make sure not to get the white part which will make it bitter.
Place the zest into a jar and pour over the vodka.
Cover the jar with a tea towel and secure with a rubber band.
Let the mixture sit for 2 weeks in a cool dry place.
After 2 weeks have gone by, you will see the vodka will have turned a beautiful yellow.
Strain the vodka into another jar or bowl, capturing the zest in a sieve.
Place a small saucepan on a medium heat and dissolve the sugar in the water.
Put the lemon zest into the sugar syrup to let it infuse. Do not bring the mixture to a boil. Keep it on a low simmer for about 5 mins, then turn off the heat and let the mixture come to room temperature.
Strain the sugar syrup and discard the zest.
Gradually pour the sugar syrup into the vodka. Try as you go. You may like it more sour or sweeter. (I usually pour in around 1/2 - 3/4 of the syrup).
Pour into bottles of your choice. They will last as room temperature however I store them in the freezer and drink chilled.
